Thanksgiving looks a little different this year, so why not shake up the menu?!? Try trading in mashed sweet potatoes for this easy roasted version. Sweet potatoes are rich in vitamins B, C and D, while fennel packs the added punch of fiber + potassium! Roast these two veggies in the oven with a little olive oil and fresh orange juice for the perfect sweet and savory Thanksgiving side dish.

Roasted Sweet Potatoes
Cook time: 60 mins, active prep time 10 mins, serves 4
Ingredients
• 4 medium sized sweet potatoes
• 2 bulbs of fennel
• 2 TBSP olive oil
• 1/4 cup fresh squeezed orange juice
• 1/2tsp garlic salt
• 1/2 tsp garlic granules
Directions
1. Preheat oven to 375º F
2. Cut sweet potatoes into 3/4 to 1 inch cubes and slice fennel into long strips
3. Toss in olive oil and arrange in an even layer on a baking sheet
4. Sprinkle with garlic and garlic salt and bake on bottom shelf
5. Cook 50 – 60 minutes
7. Remove from oven and let cool, stir in orange juice and serve
Store in refrigerator up to five days
